During this extended period of working from home, having reduced hours, and children to entertain, many people have decided to learn some new cooking skills. Clients and team members have submitted a few recipes to share. Some of these will be simple recipes that your children can make with you. We hope you enjoy!
FRUIT PIZZA
Ingredients:
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 1 egg
- 1 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 8oz package of cream cheese
- 2 teaspoons vanilla extract
Preheat oven to 350 degrees.
In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg.
Combine the flour, cream of tartar, baking soda and salt; stir this into the creamed mixture until just blended.
Press dough into a pizza or baking pan. Bake for 8-10 minutes, or until slightly browned. Cool.
In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust
Arrange desired fruit pieces on top of the filling, then chill in the fridge.

NO BAKE COOKIES – KID FRIENDLY
INGREDIENTS
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup milk
- 3 cups oatmeal
- 6 teaspoons cocoa
- 1 cup coconut (optional)
- 1 teaspoon vanilla
Combine sugar, butter, and milk in a pan, then boil for 3 minutes. Mix other ingredients in a large bowl.
Pour the boiled mixture into the bowl and mix together until thoroughly combined.
Drop by spoonful onto a cookie sheet or waxed paper to cool.

BANANA NUT BREAD
Ingredients:
- 3 ripe bananas
- 2 cups flour
- 3/4 cup packed brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 stick butter, melted
- 2 large eggs
Heat oven to 350 degrees. Spray a bread pan with cooking spray.
Mash bananas until smooth or almost smooth, then set aside.
In a separate bowl, mix together flour, brown sugar, baking soda, baking powder, and salt.
Add melted butter, eggs, and mashed bananas, and then stir to form batter. Spread evenly into greased loaf pan.
Bake until cake tester or knife inserted into the center comes out clean – usually around 55 minutes.

EGG ROLL IN A BOWL
INGREDIENTS
You can also make this with meat, like Italian sausage.
1 tbsp olive oil
1 thinly sliced onion
1 thinly sliced red pepper
2 chopped celery stalks
1 bag organic coleslaw mix (or shredded cabbage)
1 tbsp minced garlic
1 tbsp minced ginger
1 cup sliced mushrooms
2 eggs
1/2 tsp salt
Spices as desired – I like to add garlic powder, onion powder, turmeric, basil, and celery salt.
2 tbsp tamari or coconut aminos
Heat oil in a large skillet over medium heat.
Add onion, celery, and red pepper, then saute 5 minutes.
Add the coleslaw mix, garlic, ginger, mushrooms, salt and spices. Add a splash of water and cover.
Cook 10-15 minutes or until the vegetables are the desired tenderness. Stir occasionally.
Move the vegetables to the edge and add a bit more oil. Then put the eggs in the center of the pan.
Once cooked through, mix with the veggies and add the tamari or coconut aminos.
